Carlotta's Cocktail & Wine Bar at Hotel Julian San Francisco
All employees are expected to deliver truly great service, and to create a warm and friendly
atmosphere for our guests. Employees must work well as a team, maintain confidentiality and
adhere to company policies.
SUMMARY: To provide drinks to guests in an efficient, expeditious, friendly and courteous
manner.

ESSENTIAL DUTIES AND RESPONSABILITIES includes the following. Other duties may be
assigned.
 Set up and breaks down the bar area:
 Assure you are equipped with a bottle opener, wine opener, pens, check presenters,
rubber bands, paper clips, complaint forms, pos paper, etc.
 Ready all garnishments needed for the preparation of drinks.
 Clean all bottles and rails, wipe down check presenters; computers, and bar area.
 Clean and polish bar, counters, shelves, equipment, bar stools, etc.
 Maintain and stock adequate supplies of bar items such as glasses, cups, napkins, drink
supplies, condiments, etc.
 Stock refrigerating units with wines, beer, etc.
 Replenish ice at bar.
 Perform accurate cash and POS procedures:
 Count bank before and after shift.
 Prepare and serve drinks according to recipes for guests and server.
 Suggest wines by the glass and bottle options which supports our sharing concept.
 Ensure standardization and consistent beverage preparation, presentation and quality.
 Responsible to “up sell” on any given opportunity.
 Retain and maintain complete knowledge of all food and beverage menu items.
 Using the Bar Food menu as another selling tool.
 Recommending/pairing a certain dish that the guest might have with the drink.
 Checks identification for proof of age when required.

 Build a rapport with guests while serving them.
 Monitor guest’s drinks and anticipate guest’s needs.
 Keep bar counter, shelves, rails, stools, and all surfaces around the bar clean at all
times.
 Ensure proper payment from departing guests.
 Prepare bar for next shift.
 Perform accurate cash/credit handling and POS procedures in accordance with
Company policies and procedures.
 Ensure the order and cleanliness of the bar is in accordance to health and safety
regulations.
 Must be knowledgeable about Hotel, Restaurant/Lounge and surroundings, i.e. nearby
entertainment, stores, hotels, etc.
 Must have the ability to work a flexible schedule and late hours when necessary.
 Must have the ability to work on time and on a regular basis.
